Green Lentil and Wild Rice Salad

Ingredients

1 cup green lentils

1/4 cup red wine vinegar

1/2 teaspoon salt

1/2 teaspoon dried oregano

1/4 teaspoon pepper

Pinch thyme

1/4 cup vegetable oil

1 cup cooked wild rice

1 cup diced red onion

1 cup diced celery

1/2 cup sliced radishes

Directions

Rinse lentils; place in saucepan, cover with boiling water and let stand for 30 min. drain, rinse until water becomes clear, drain and cover with 4 cups boiling water. Bring to boil. Reduce heat to medium-low; simmer for 5 to 10 min. or just until tender. Drain; transfer to serving bowl.

Stir together vinegar, salt, oregano, pepper and thyme; gradually whisk in oil. Stir into lentils. Mix in rice, onion, celery and radishes. Serve immediately or cover and refrigerate for up to 8 hours.
